Cape Romain Food Specialties is owned and operated by Pam Hollings McConnell, a native Charlestonian who has been cooking golden jars of relish for her family for years. When demands from friends and family consistently outpaced her yearly production, Pam started thinking about sharing her relish with a broader audience. Never one to turn down a challenge or opportunity to learn something new, Pam put her old family recipe to the test (literally, at the FDA) and went commercial. All jars of Jerusalem Artichoke relish are cooked, packaged, and distributed by this one-woman show. Pam and her husband Bright live near McClellanville, South Carolina, in the middle of the Cape Romain National Wildlife Refuge.
